The Art of Sausage Making

Come and join Yolo County farmers, sausage makers, chefs, and winemakers to celebrate and taste the county’s heritage of farmstead sausage-making followed by lunch at Woodland’s Tazzina Bistro on Saturday, February 7, from 10:30 AM – 3:00 PM at a fundraiser for Yolo Land Trust cosponsored by Slow Food Yolo.

You’ll be welcomed by Paul Muller, partner in Full Belly Farms, and other Yolo Land Trust board members, with a blood orange mimosa. Then settle in for an exciting morning of activities including a presentation by 5th generation farmer Bruce Rominger, on the history of the Rominger family sausage-making traditions with original historic photos. Casey Stone of Yolo Land & Cattle Company will conduct a sausage-making demonstration with pork from John Bledsoe and Riverdog Farm. Stone usually makes venison sausage but today will be making pork sausage and everyone will be able to take home a few, so bring a small cooler and ice pack. Fred Manas, of Manas Ranch, will present his family sausage making traditions as well. Bob Marr, winemaker and owner of Woodland-based Marr Cellars, will conduct a sausage and wine pairing featuring his old vine Zinfandel and blends. Tony Gruska, popular local chef and caterer of Monticello Bistro, will be cooking and pairing Capay Valley organic winter greens with sausages for tasting.

When all is done, sit down together for a lunch inspired by local winter fare – savory salad of roasted winter vegetables, Davis Food Co-op sausages, and creamy polenta by Chef/Proprietor Rebecca Reichardt. Lunch is paired with Rominger West wines, handcrafted by Mark West.
